What’s in my lunch box? Cheap veg and freezer rice

Everywhere I went at the weekend I stumbled across cheap (or free!) fruit and vegetables. So between scoring bargains at supermarkets and green grocers, and gathering windfall plums (lovely compoted for my morning porridge) I began to see a direction for lunch.

I fried up some spring onions, garlic and ginger (from the huge tub of these three I keep chopped in the freezer) and then added cheap carrots, bean sprouts and courgettes. A bit of turmeric and a dash of some random spices later it was time to chuck in a stock cube and some pre cooked brown rice (more freezer supplies). It's good hot or cold. Easily portable. Goes lovely with raw cucumber and celery. And it left me time to make pancakes and a rather delicious potato and broccoli soup with fresh mint.

In the last 7 days: brew, books and baking

 

The first Colchester vegan drinks at the Queen Street Brew House. This was the first of a regular meet up for vegans on the second Tuesday of the month at 7pm so why not join us in September?


Lounging on the lawn – an afternoon of sipping ales while leaning on hay bales and listening to local talent perform. A lovely relaxed day with friends – some of whom enjoyed it so much they went back for more on Sunday! V Catering where there with their rather splendid burgers.

No week is complete without lunch at the Den at 23 preferably with a Matcha Latte. And I might have snuck back for a cake….

My reading pile has decreased a bit this week but there’s still plenty to get through

I scored lots of amazing fruit and vegetables at my local greengrocers and so had an early morning cooking session including my lazy tomato sauce (bung quartered tomatoes, roughly chopped onions of some kind and whole garlic cloves in a dish, bake until soft then mash. Stir in a spoonful of tomato puree post mashing if it’s too runny) so plenty of food ready for the week ahead and for the freezer.

What’s in my lunch box? Rice and Marvel

My sushi making has massively improved since I attended a Japanese cooking class with Kamikaze kitchen. It’s the little things like knowing the rice needs much more rinsing than you’d think, and that it’s better not to over stuff the rolls. I think my rice paper work could do with some attention but these turned out to be a pretty good lunch for a summer day.

Clockwise from top left:

  • Cherry tomatoes
  • Celery
  • Cucumber and tub of soy sauce for dipping rice paper rolls – the tub was way to small for dipping purposes. I need a bigger tub, or smaller rolls in future
  • Rice paper rolls filled with cooked sushi rice mixed with rice wine dressing, salt, sesame seeds, cucumber and yellow pepper.

What a fantastic read! Who would have guessed that there was so much discord behind the creation of some amazing comics and graphic novels. It’s brilliant to discover how characters came into being, the ill-fated attempts to appeal to female and minority audiences, and how comics became graphic novels. The way the editors, artists, writers and inkers worked (and sometimes it was all one person) and the issues they had trying to share their vision while keeping the management and fans happy made me think of a rock band trying to create a visionary concept album they only they truly understood. The difference being here that a character or title could easy be passed onto a new creator who’d have a new angle to explore.

What’s in my lunch box? Pizza and Badger

It was Colchester Vegan fair on Saturday. A very good day which allowed for meeting friends, making new ones, plotting to create meet up groups, eating cake and drinking beer.Alas I was too busy enjoying myself to take nay photos except for this one which includes food from V Catering.

Badger was there selling his delicious dairy and egg free products so I couldn’t resist buying some to go in this week’s lunch box. Here’s Badger prosing with his products when they were released last year.

If you are vegan (or vegan curious) and anywhere near Colchester do consider coming along to Colchester Vegan meet up and drinks. I’m also quite keen on starting up Sunday Assembly in Colchester but suspect I need a few more hours in the days to find the time to make that a reality…

I expected this to be somewhat like the Ben Arronovitch Rivers of London series. It has overlaps, certainly geographically. However this is much less cuddly. It’s much more like a crime thriller. While I rather like the idea of hanging out with Peter, Lesley and Nightingale (not sure about Molly) at the Folly I’m definitely less keen on joining Quill, Costain or Sefton for a swift pint although Lisa Ross is a possibility I might consider (but I’m not sure she’d be terribly keen)….
