This week’s veg bag

Lots of lovely inspiring veg in this week's bag veg bag contents

Here's what I made with it:

Sunday Waldorf salad with celeriac and paprika potato wedges
  • Waldorf type salad with celeriac, apple, walnuts and vegan mayo
  • Paprika potato wedges
  • Served on salad leaves

Monday pasta with broccoli sauce

  • Spaghetti with steamed broccoli and a sauce made of broccoli stalks, olive oil, garlic and salt
Tuesday jacket potato with spiced roast swede and chickpea and fried cabbage
  • Swede and chickpeas roast with spices
  • Jacket potato
  • Fried cabbage
Thursday chilli chard with rice and cashews
  • Chard cooked with onions, chilli and garlic
  • Brown basmati rice
  • Cashews browned in vegan margarine
Friday carrot and lentil soup
  • Carrot and lentil soup (leeks, onions, carrots, garlic, red lentils, ginger, turmeric and stock blended with an onion/cumin seed/mustard seed tarka)
  • Bread and vegan margarine
